Too often I hear people say, “Well, I would love to eat better or go to the gym, but I just don’t have time. I have to take care of so and so” or “I can’t pay for wellness treatment right now. I have to pay for this or that“. I am sure you too have heard this or maybe you have even said this. Here is the thing that many of us look over. If we do not take care of ourselves, who is going to take care of “so and so” or pay for “this and that” once we are DIS-eased and worn out? Have you ever stopped to think about this?
The body was wonderfully created to heal itself, to function optimally throughout our lifetime; however it does require some upkeep. Would we expect our brand new car to function optimally for 10 years if we never cared for it? If we never washed it, changed the oil, or we always put the wrong kind of fuel in it? No, of course not! We know better! Yet this is what we do to our bodies every day! Why do we just assume that pain, disease and lack of mobility are just “part of getting old”? Have we considered that maybe it is the result of a lack of care for our bodies?
This past week, I have been reading a lot in Genesis. I am astounded at how long they lived back then. Now, I am not saying that I think we all should still be living to 900 + years old, but it did make me think. Our Creator would not create something that was meant to fail, meant to break down and be dysfunctional. He wouldn’t have called his creation “good” if he had intended for it to fail. Yes, we all will die. All of our bodies will stop functioning at some point, but I think we have let this idea of “getting old” trick us into thinking that the care of our bodies isn’t up to us. Maybe we have let ourselves believe that there is no relation between how we care for our bodies and how our bodies function. It is time to stop fooling ourselves. It is time to take action.
I want to encourage you this week to change your perspective. See your health as something you are responsible for -either for good or for bad.
It is up to you.

Fourth Amendments

"Fried" Chicken Baking (not frying) keeps the fat in check. Cook extra for leftovers.
4 3-ounce skinless chicken breasts 1 cup buttermilk, with salt and pepper 1/2 cup seasoned bread crumbs 1/2 cup oat bran
Pour
buttermilk over chicken; let sit one hour in fridge. Line baking sheet
with foil. Put dry ingredients in a plastic bag. Place one chicken
breast in bag; close and shake to cover chicken. Place chicken on
baking sheet. Repeat for other pieces. Cover with foil; bake 40 minutes
at 375° F. Remove foil and bake 15 minutes.
Serves four. CALORIES PER SERVING: 245 CARBS: 19G PROTEIN: 29G FAT: 5G
Potato Salad Fennel adds crunch, a hint of licorice, and loads of antioxidants.
2 pounds red potatoes, quartered 2 tablespoons low-fat mayonnaise 1 tablespoon vinaigrette (try one with balsamic vinegar) 3 scallions, thinly sliced 2 celery stalks, diced 1/4 fennel bulb, diced 1/4 cup flat-leafed parsley, chopped Salt and pepper to taste
Boil
potatoes in water until tender (about 12 minutes). Drain and allow to
cool. In a mixing bowl, combine the next six ingredients. Then add
potatoes, salt, and pepper. Mix gently, being sure to integrate all the
ingredients. Chill one hour in fridge, then stir again.
Serves six. CALORIES PER SERVING: 140 CARBS: 26G PROTEIN: 3G FAT: 3G
Strawberry Shortcake Using Greek yogurt instead of whipped cream makes a high-protein dessert.
1 1/2 cups flour 2 teaspoons baking powder 1/2 teaspoon baking soda 1 tablespoon sugar 1/2 tablespoon salt 3 tablespoons trans-fat-free, reduced-fat margarine 2/3 cup low-fat buttermilk 2 pints strawberries, hulled and sliced 2 cups Greek yogurt with honey
Combine
first five items in a bowl. Cut in margarine until crumbly. Stir in
milk. Knead dough on floured board; shape into a rectangle; cut into
biscuit rounds. Place on greased baking sheet. Bake at 425° F for 10
minutes. Split biscuits in half, filling middle with berries. Top with
more berries and yogurt.
Serves six. CALORIES PER SERVING: 285 CARBS: 46G PROTEIN: 9G FAT: 8G

In the early 1950's Winifred Gardella was a poster child for the March of Dimes. Her picture was published in the newspapers to raise huge sums of money for the March of Dimes in San Francisco. Nationally, her image raised millions of dollars to help fight the dreaded crippler, polio. Her sad, innocent face and her tiny body supported on crutches and leg braces, made many Americans reach into their pocets to donate.
But the March of Dimes couldn't help Winifred. After tow and half years under their medical doctor's expert care her parents were: "There is no hope."
Despite this dire prediction, her grandparents were determined to find a cure. They were not about to accept the opinion of so-called "medical experts." They decided to choose their own health care and they took Winifred to Dr. Lewis Robertson, a chiropractor. In less than six months of having her nerve interference corrected, Winifred Gardella therw away her crutches and braces and went for a walk with her chiropractor. She has been walking ever since!
